Sotará is the first naturally processed coffee from Colombia in our portfolio. The Sotará inspires us with a fruity-complex and at the same time very sweet, chocolaty flavor. In addition to its chocolatey taste, Sotará reminds us of summer fruits such as apricot and watermelon. Also special here is also the wonderful interplay of its sweetish character and a sparkling acidity.

CHOCOLATY COFFEE WITH FRUITY ACIDITY

The Sotará is a sweetish and at the same time fruity coffee that impresses with its intense and complex aromas. In addition to the fruity-sweet nuances of ripe apricots and watermelon, which already thrilled us during the cupping, the developed roasting profile also brings out notes of dark chocolate. The Sotará coffee is roasted to a medium strength, so that it tastes very balanced and surprisingly clear for a natural.

Preparation tips

Sotará coffee is suitable for all types of filter coffee. We recommend the coffee for preparation with the hand filter, the Chemex or the classic filter coffee machine, such as the Moccamaster.

Medium roast

We roast the Sotará fresh every week and in a particularly gentle manner in our roastery in Berlin. Our roasting masters pay close attention to the moment when the sweetness and aroma of the coffee develop optimally. The roasting profile is individually composed by our roast masters depending on the characteristics of the coffees.

Coffee from Colombias best growing region

Sotará is an area in the department of Cauca, in the southwest of Colombia. Some of the best coffees in Colombia come from this region in Cauca, which is located at a very high altitude.

The Micromill processing station in Cauca near Sotará is located at a very high altitude of 2,025 m.a.s.l. and so the cherries here ripen late during harvest time. This makes the cherries very sweet and provides optimal conditions for an exceptional coffee.
The coffee producers attach great importance to the careful preparation of the cherries. After picking, the ripe red coffee cherries are separated from unripe cherries by so-called floating in a water bath and then dried on raised drying beds in the sun for about 3 weeks. Meanwhile, the cherries are regularly turned by hand for even drying, with defective cherries being selected by hand. These naturally processed coffees are ideal for fans of filter coffees with fruity and complex flavours and exciting aromas.

Mein Lieblingsfilter

Ich habe bisher noch nicht allzu viele Filterkaffees mit meinem V60 gebrüht, aber von denen die ich getestet habe, schmeckt mit der Sotará mit großem Abstand am besten!
Geschmacklich finde ich ihn einfach nur fantastisch, weshalb ich ihn nur empfehlen kann!
Werde mir ihn mit Sicherheit noch mehrmals zulegen :)

Einzigartig

Einer der besten Kaffees des Hauses.
Mit dem richtigen Mahlgrad und einer guten Dosierung schmeckt diese Röstung sehr frisch und sommerlich.

Naja ...

Der Kaffee wird bei mir eigentlich immer nur ziemlich sauer , fruchtige Aromen bekomme ich mit meiner brühmethode überhaupt nicht raus .Vielleicht bekommt man mit einer anderen Methode ein gutes Ergebnis raus , da ich aber eigentlich immer bei meinem gleichen Rezept bleibe und nicht für jeden Kaffee ein anderes nutzen will fällt der Kaffee bei mir eher durch .
