The Pink Bourbon Decaf comes from the Huila region in the southwest of Colombia. The coffee farm of Jhoan Vergara and his family is located at an altitude of 1,750 meters. Jhoan has earned himself an international reputation in the specialty coffee world thanks to his exceptionally good work and the quality of his coffees. In addition to the usual Colombian Arabica coffee varieties such as Castillo, Caturra and Bourbon, Jhoan Manuel also grows the unusual „Pink Bourbon“ variety. The name is derived from the pink color of the ripe coffee cherries of this plant. This variety requires a lot of attention and care from the farmer, and the yield is lower than with other varieties. After harvesting, the cherries are carefully processed by floating them in a water bath to separate ripe from unripe cherries. The beans are then mechanically separated from the pulp and the remaining pulp is removed by fermentation. Finally, the beans are placed on raised drying beds to dry evenly and are regularly turned by hand.
How is coffee decaffeinated?
The coffee was decaffeinated using ethyl acetate. This is a natural solvent obtained from cane sugar and can be used to remove over 97% of the caffeine content. The ethyl acetate residue is less than 30 ppm and the coffee is therefore free from any foreign smell or taste. Only the beautiful sweet, fruity notes of the balanced coffee remain.
