We are excited to offer you our crowd favorite – the Yirga Santos Espresso – now in a decaffeinated version. To ensure the same taste experience, we’ve used the exact same green coffee components and had them decaffeinated at a German coffee refinement facility, according to our specifications.
The process used is a gentle and natural water decaffeination method. In this method, the caffeine is literally washed out of the beans, while the natural aromas of the coffee are preserved.
The result? A decaffeinated coffee that comes remarkably close to its caffeinated original – with full flavor and delicate nuances. Try it for yourself!

Preparation Tips
The roast of the Yirga Santos Decaf is tailored to suit all espresso preparation methods. For best results, brew freshly ground beans using a portafilter machine or a stovetop Moka pot. Yirga Santos also makes a great cappuccino.
Medium and Fresh Roast
We roast the Yirga Santos Decaf fresh every week in our Berlin roastery. Our roastmasters pay close attention to the exact moment when the coffee’s sweetness and aromatic profile fully develop. The roast profile is customized by our experts depending on the specific characteristics of the beans.


The Decaffeination Process
The process begins by treating the coffee beans with steam to open their cell structure and remove the silver skin. Next, the beans are soaked in water, which extracts not only the caffeine but also other water-soluble substances. This caffeine-rich solution is then passed through activated charcoal, which selectively removes the caffeine. Afterward, the partially dried beans are brought back into contact with the now caffeine-free liquid so that the flavors can be reabsorbed by the beans. Finally, the beans are dried until they return to their original moisture level.

Origin
Yirga Santos Decaf is an Arabica blend from three origins, most of which we source directly on site:
Around 35% of Yirga Santos comes from Limu coffee, grown on the Ethiopian farm of Jemal Adam. We got to know and appreciate Jemal Adam as a passionate coffee farmer during our travels through Ethiopia. His farm is located about 2,000 meters above sea level. The coffee is naturally grown in forest gardens and carefully processed by smallholders.
The Brazilian coffee comes from the APAS cooperative in the Mantiqueira de Minas region, in the state of Minas Gerais in southeastern Brazil. The cooperative is made up of small-scale farmers who place equal importance on top-quality coffee and fair production practices. The growing region is located at around 1,200 meters altitude, where the coffee is carefully harvested and processed. The coffee cherries are sun-dried after harvest (natural processing), which gives the coffee a ripe sweetness and a wonderfully chocolaty note.
The remaining 25% comes from Peru, from the Yakumama cooperative located in the Cajamarca region – a renowned high-quality coffee-growing area. Here too, the coffee is cultivated and processed using sustainable, ecological methods.
