Diverse Flavors Thanks to Ideal Growing Conditions

As a single origin coffee, it comes from the “Daterra – sustainable coffee” farm, located in the “Cerrado” of Minas Gerais – a savanna region in southeastern Brazil. This region is known for its consistent climate and nutty, chocolatey coffees with a smooth character. Here, the coffee plants grow under ideal conditions at altitudes of up to 1,200 meters: wind, sun, and soil give the Arabica plants their distinctive flavor. The different altitudes and microclimates ensure a variety of flavors – from velvety chocolatey to floral and fresh.

Sustainability and Research to Protect Natural Resources

Daterra is one of the pioneers of sustainable coffee cultivation in Brazil. The family-run business works closely with universities and research institutions to develop new, environmentally friendly cultivation methods. The aim is to combine agriculture with the protection of natural resources – through measures such as soil conservation, reforestation, and water treatment.

At Daterra, the cherries are only harvested by hand when they are just right in terms of taste. To achieve this, they are tasted repeatedly until the perfect moment has arrived. They are then sorted by a special machine that was developed by the farm over a period of 10 years. This machine recognizes exactly how ripe each individual cherry is and sorts it where it belongs. The beans are then gently dried and left to rest in large wooden silos for over 40 days. During this time, their flavor becomes rounder, smoother, and fuller. Finally, the beans are sorted and checked several times – by size, weight, and even with light scanners that detect even the smallest defects. In the end, only the very best beans remain – clean, balanced, and full of flavor. Just as they should be in the cup later.

Daterra Farm

The Daterra farm is located in the Cerrado region of Minas Gerais, Brazil, and regularly sets new standards in sustainability. Divided into 216 mini-farms, innovative methods are used here to conduct research, plant and harvest in cooperation with universities. Since 2018, we have had a close partnership with the farm, which is currently also supporting us in fermentation experiments. Daterra was Brazil's first Rainforest Alliance farm – diversity, progress and responsibility are its foundations.
