The coffee is named after its producer: Maria Rosa Oidor. Together with her family, she runs Finca Los Nogales with great care and dedication. Her passion for quality and craftsmanship has resulted in a coffee as special as the story behind it – a refreshing Pink Bourbon with real depth, grown by a woman with vision. Selling microlots like this one helps Maria Rosa develop her farm sustainably and support her family – a great example of how quality and fairness can go hand in hand.





Preparation Tips
We recommend brewing Maria Rosa using pour-over methods like the Hario V60 or the Aeropress. The light roast profile really shines when brewed manually – highlighting the coffee’s brightness, clarity, and sweetness.

Origin
Inzá, Cauca – a region known for outstanding Colombian coffee – meets the craftsmanship of a remarkable woman: Maria Rosa Oidor. On just three hectares of land above San Antonio, she cultivates the rare Pink Bourbon variety with her husband Antonio and their four children – a hybrid known for its floral and complex profile.
Nestled in the Colombian Andes, ideal conditions create real coffee treasures. The family focuses on quality and handcraft – from cherry selection and fermentation to drying on raised beds. Maria Rosa is a true pioneer: at 58, she organizes all the daily work on the farm herself.
Processing: Washed (Batch Mixing)
Each cherry is hand-picked, carefully selected, and processed with great care. The coffee undergoes an elaborate method known as batch mixing: cherries are harvested over a full week, depulped daily, and added to the same fermentation tank. The fermentation process is only completed on Friday. Afterwards, the coffee is fermented underwater for 36 hours, gently washed, and dried on raised beds. Once the perfect moisture level is reached, it is packed and exported.
The result is an exceptional filter coffee in every way. Maria Rosa’s microlot highlights the natural sweetness and fruitiness of the Pink Bourbon variety, along with its fine texture – a true gem for those who value nuanced flavors and artisanal craftsmanship.
