Innovative Cultivation on Fertile Soils Amid Brazil’s Highlands
Aramosa Low Caf comes from the Daterra farm in the Cerrado region of Minas Gerais, Brazil. This savanna landscape is renowned for its stable climate and its distinctive coffees — rich in chocolate and nutty notes with a smooth character. At elevations of up to 1,200 meters, Arabica plants grow here under ideal conditions. Sun, wind, and nutrient-rich soils give them their unmistakable flavor. The varied altitudes and microclimates contribute to a diverse range of aromas.
Since our first journey to Brazil in 2018, we’ve maintained a close partnership with Daterra. The farm is recognized worldwide as a pioneer in sustainable coffee cultivation. In collaboration with universities, Daterra has been developing innovative approaches to future-oriented agriculture for many years — earning numerous awards for its work. Its goal: to unite farming with the protection of natural resources through measures such as soil conservation, reforestation, and water treatment.
Natural Low Caf: Specially Developed Varieties for Full Flavor, with Less Caffeine
One of Daterra’s projects focuses on developing Arabica varieties that are naturally low in caffeine. One of these unique plants provides the beans for Aramosa Low Caf. Its caffeine content is around 0.7–0.9 % – significantly lower than that of conventional Arabica beans (1.2–1.5 %).
At Daterra, the coffee cherries are harvested exclusively by hand and only when they have reached their perfect stage of ripeness. To determine this, the cherries are repeatedly tasted until the ideal moment is found. Afterwards, a machine specially developed by the farm precisely sorts each individual cherry by ripeness, ensuring that only perfectly matured fruits continue to processing.
The beans are then gently dried and left to rest for over 40 days in large wooden silos. During this time, they develop their rounded, mellow aroma. Before the final selection, the beans undergo several quality checks – for size, weight, and even through high-precision light scanners that detect the tiniest imperfections. In the end, only the finest beans remain: high-quality, balanced, and full of flavor.

Daterra Farm
The Daterra farm is located in the Cerrado region of Minas Gerais, Brazil, and regularly sets new standards in sustainability. Divided into 216 mini-farms, innovative methods are used here to conduct research, plant and harvest in cooperation with universities. Since 2018, we have had a close partnership with the farm, which is currently also supporting us in fermentation experiments. Daterra was Brazil's first Rainforest Alliance farm – diversity, progress and responsibility are its foundations.
